If you’re looking for a budget-friendly dinner recipe that’s both delicious and easy, you’re in the right place! I’ve had so many requests for cheap and easy meals, so I went straight to my kitchen to create something that’s packed with flavor but won’t break the bank. What did I come up with? A black bean taco recipe that’s perfect for frugal meal planning—using minimal ingredients while still bringing that bold Mexican-inspired taste we all love. This recipe is not only affordable but also quick to make, making it ideal for busy weeknights!



The Inspiration Behind This Recipe


Now, you may think I really went out on a limb with this recipe, but first, I wanted to see what I could make, and second, I am having allergic reactions to so many things lately that I am really trying to pare down the ingredients I use to see what’s causing me so many issues.


With Mast Cell Activation Syndrome, I have a lot of inflammation in my body, so I try to keep it down as much as possible. Inflammation can cause a host of health problems, and I don’t need any extra struggles. I haven't mentioned Dr. William Li lately, but I still keep up with his research. He believes that black beans can destroy cancer cells, and if we can avoid getting cancer in the first place, why not try?


Personally, I love black beans, and so does my husband—although, spoiler alert, he wasn’t on board with this recipe. More on that in a minute!

Why Black Beans?


If you haven’t cooked much with black beans, let me tell you why they are a pantry staple for me:

The Recipe: Black Bean Tacos


Ingredients:

  • 1 can black beans, drained and rinsed

  • Shredded carrots, about 1/4 cup (I eyeballed this)

  • 1/2 small zucchini, thinly sliced

  • 2 tablespoons shredded cheese (cheddar or Mexican blend)

  • 1 teaspoon taco seasoning

  • Taco shells (hard or soft, your choice!)

  • Salsa


Instructions:

  1. Prepare the taco shells – If you’re using hard shells, place them in the air fryer at 325°F for 6 minutes. If you don’t have an air fryer, you can bake them at 350°F for about 5-7 minutes.

  2. Sauté the veggies – Heat a pan with a small amount of olive oil. Add the carrots and zucchini, cooking until they start to soften.

  3. Add the beans – Toss in the black beans and taco seasoning, stirring well to combine. Cook for a couple of minutes until everything is warmed through.

  4. Melt the cheese – Sprinkle cheese over the mixture and stir until melted.

  5. Assemble your tacos – Fill the shells with your black bean mixture and serve immediately. Add salsa if you choose.

The Husband Test (And Failure!)


This recipe made six tacos, enough for three meals—plenty for me to enjoy and, of course, I made one for my husband. Guess what? He wouldn’t even entertain the thought of a meatless taco. How rude, right? He took one look and said, “Where’s the beef?” (funny guy, huh?) I guess some things never change!


But here’s the thing—I still think this recipe is worth sharing. Not everyone in your household might be on board with meatless meals, but if you’re looking for a healthy, frugal, and quick dinner, this is a winner. Plus, you can always add meat if you prefer!

How to Customize This Recipe


One of my favorite things about this recipe is how versatile it is. Here are some ways you can change it up:

  • Add ground beef, turkey, or chicken – If your family is like mine and insists on meat, brown some ground beef,  turkey, or chicken with taco seasoning and mix it with the black beans.

  • Try different veggies – Bell peppers, onions, or grape tomatoes would all work beautifully in this dish.

  • Use different cheeses – Queso fresco, Monterey Jack, or a dairy-free alternative.

  2. Use what you have – Get creative! Look in your fridge and pantry before grocery shopping. I look to see what is in the pantry and fridge before I go buying more food. 

  3. Plan your meals – Having a plan prevents food waste and impulse buys. Now, I am not this organized, but my aunt planned her meals a month in advance. I just cannot seem to get with the program. 

  4. Repurpose leftovers – Turn extra black bean taco filling into a burrito bowl, nachos, or even a quesadilla the next day. I really enjoy repurposing food, it is just another way to be creative. As you do this more, you become more comfortable and know what works and what doesn't together. 

  5. Shop sales – Watch for deals on cheese, taco shells, and produce to keep costs low.
