Spicy Chicken Soup with a Mexican Twist
Spicy Chicken Soup
Ingredients:
- 4 chicken thighs, shredded or cut into chunks
- 1 onion, diced
- 1 green pepper, diced
- 5 celery heart ribs, sliced
- 2 cans corn, do not drain
- 2 cans Rotel, do not drain
- 1 32 oz chicken broth
- 1 12 oz package sliced frozen carrots
- 1 1/2 t ground cumin
- 1/2 t coriander
- 1 t garlic powder
- 1/2 t onion powder
- 1/2 t chili powder
- 3 T lime juice
- Salt and pepper to taste
Instructions:
Place chicken thighs into the stockpot along with the onion, green pepper, celery hearts, carrots, and spices. Cover the pot with a lid and cook on medium heat until the chicken is no longer pink and veggies have softened.
Add the corn, Rotel, chicken broth, and lime juice.
Allow the soup to simmer for 20 minutes.
Serve hot and enjoy!

ReplyDeleteYou will have to let me know if you like this recipe Susan, it tasted really good, but the spice was hot! I am kind of wondering if the Rotel was their more spicy variety than the mild I usually buy. I am not sure, it was just wow, we were not ready for the heat. I didn't know you could purchase it in a case, we need that because I put it in everything. lol
