I have to share with y'all! Most of you who have been with me a while know my Grandma, Rosezella, was the gal behind the "Waste Not, Want Not" movement. 


All through my childhood, I heard that phrase whenever I visited Grandma and Grandpa. She had a knack for turning what seemed like nothing into something, and I guess that rubbed off on me in more ways than one!


Initially, I used that thought process with wasted ingredients in the kitchen, and then it became a whole thing—now I find myself giving most of our trash makeovers too. 


From turning old furniture into something new to using up leftover ingredients in creative recipes, I can hear her voice in my head, reminding me to make the most of what I have.


While I’d like to think most of you appreciate this logic, I know it’s not everyone’s cup of tea. But for me, it’s more than just saving money—it’s about finding joy in creativity and resourcefulness. 


We used to laugh and say, “Rosezella would spend $10 to save $2,” but those small moments often turned into something memorable and delicious.

Often, we’d hear her say, “I have some applesauce that’s about to go bad; I need…” and she’d provide a list of ingredients for whatever recipe she had in mind to use it up. And you know what? It always turned into something amazing, every time.


As I get older, I find myself becoming more and more like her. (Shhh… my husband tells me this is inevitable, and I tell him to be quiet! There’s nothing wrong with being like my family—I just like to think I’m my own person.)


So just the other day, I found myself wondering: How am I going to use up all of this Rice Chex cereal? 


I don’t usually buy it, but I had a hankering for Puppy Chow (you know, the grown-up version!), and after making a batch, the rest of the cereal sat there. Like Grandma, I couldn’t let it go to waste. I’m a huge fan of gluten-free chocolate chip cookies, so I started thinking, "What if I could combine the two?"


And that’s how this oh-so-yummy, crispy, chocolatey, crunchy cookie recipe was born! 


I have to admit, they are delicious—and a little dangerous because they’re so addicting! My husband told me, “I need to stop giving you a big head, but these are scrumptious!” Yep, another successful recipe to share!

The Perfect Gluten-Free Chocolate Chip Crispy Cookies


So, for all my gluten-free cookie lovers, this recipe is a real treat. 


Not only does it combine the crispness of Rice Chex with the chewy goodness of a classic chocolate chip cookie, but it’s also made with gluten-free flour, making it perfect for those who can’t eat gluten. 


Plus, the addition of Rice Chex cereal gives it a unique crunch you won’t find in your average gluten-free chocolate chip cookies.


Here’s how you can make your own batch of these crispy, chewy delights:

Ingredients:

  • 2 cups Rice Chex cereal (divided)
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 2 cups all-purpose gluten-free flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 bag milk chocolate chips


Instructions:

  1. In a large bowl, mix the butter, sugars, and 2 cups of Rice Chex together until the Rice Chex is crumbled into fine pieces.
  2. Add vanilla extract and eggs, mixing until smooth.
  3. Slowly incorporate the gluten-free flour, baking soda, baking powder, and salt into the wet ingredients. Continue mixing until everything is well combined.
  4. Gently fold in the remaining 2 cups of Rice Chex and the milk chocolate chips. Be careful here—cereal and chocolate chips tend to pop out of the bowl! I didn’t want the last cups of cereal to be crushed, so I folded them in by hand.
  5. Roll the dough into small balls and place them onto a silicone baking mat for easy clean-up.
  6. Bake at 350°F for 10 minutes. Once they’ve set, remove them from the oven and let them cool on another silicone baking mat.
  7. Store your cookies in an airtight container (I love my Lock & Lock), but trust me, they won’t last long!

Now, here’s the thing: if you’re headed to a large gathering, this is the cookie recipe to make. It yields a lot! I filled an entire 9x13-inch airtight container with these cookies. 


The secret? 


I used what was left in the Rice Chex box—about 4 cups in total. Grandma would have been proud.
