Viral Cottage Cheese Bread: My Attempt at the Two-Ingredient Sensation

A sweet reader thought my recipe shares had ended (they haven't, I am just taking a little break from the kitchen), and sent in a few ideas. She asked if I had seen the Cottage Cheese Bread recipe that has gone viral?


Of course, me being me, I have not. 


I prefer chatting it up with you here, not really one to spend a lot of time on social media... *cringe* I know, I write a blog, and I probably should spend more time there, but blogs are what make me smile.  


Before I began blogging, blogs were my respite from the world, and I hope I bring that to you too. Social Media gets me frazzled, but blogs... oh, I love how I can sit down, and take time for myself, and read through an entire story, or project at my own pace.

So let's get this viral cottage cheese bread underway.


Our reader indicated it took only two ingredients: cottage cheese and eggs

How hard can it be? 


And since we know I cannot leave well enough alone, I added a few ingredients to my liking. 


Let's see how this viral cottage cheese bread turns out; you may be surprised with my findings. 


Viral Cottage Cheese Bread 


Ingredients:

  1. 1 c cottage cheese
  2. 2 eggs
  3. 1/2 t dried parsley
  4. 1/2 t Italian seasoning, I used Pampered Chef, it is what I had on hand
  5. 1/2 t garlic powder
  6. Pepper to taste
  7. Dash of kosher salt 

Instructions:
  • Preheat oven to 350 degrees
  • I dumped my measured ingredients into my small food processor and pureed the ingredients until there were no lumps, the consistency was thick and I thought we are off to a good start
  • Place a piece of parchment paper over a cookie sheet
  • Pour batter onto parchment paper, I spread the batter and formed it into a rectangle 
  • Place into oven, set for 35-40 minutes and bake, I began at 35minutes, and it did not seem to be setting up, so I placed it back into the oven for another 5 minutes, totaling 40 minutes in the oven

That easy?


Apparently so!


Only my bread didn't look like what our reader sent me. 


Mine looked more like a thick, baked egg, not crunchy, yummy bread

I picked up the right end of the parchment paper lifting it up, and my bread rolled up. Then I picked up the other end of the parchment paper, and my bread unrolled. 


Not exactly bread texture is it?


My husband who was looking forward to giving this viral cottage cheese bread a try, walked in the back door, turned up his nose and said I am not eating that!


Do you get the sense I hear this a lot around here?


I do, and it ticks me off every time I hear it.


Where did I go wrong?


My husband, the ever loving supporter he is, immediately went online and asked what my ingredients were. 


I replied, cottage cheese, and eggs, and then he asked did you do this, and did you do that? 

Yep, yep, and yep... his reply? I am not sure where things went sideways dear. 


Yeah, me either, but I can promise you a two ingredient recipe isn't taking this gal down. 


No siree, I will figure this out. 


I need to stew a bit, and see how I can improve it so we can have a yummy, crunchy, thick flatbread recipe, one we can all love and share with friends and family.  


In case you were wondering. I did make a sandwich from my concoction.

A tuna fish sandwich from my egg bread, and it did taste pretty good, but I just did not care for the texture. 


I had to eat it with a fork, making it not really a sandwich in my mind. 


So, until next time... hopefully I get this recipe figured out so we can have homemade bread. If you are gluten free, and purchase bread, then you know how expensive it is. I sometimes have a difficult time justifying the purchase price and was really looking forward to this alternative.

But, if you are just looking for more protein in your diet, then hopefully I get this figured out for the both of us. 


Side note: my doctor shared that we all need more protein in our diets, and so I am trying my hardest to bring more protein to us all. She indicated as we age, we lose muscle tone (no surprise there, I knew that), but we need to keep all of the muscle tone we can to prevent a lot of heartache and pain in the future.

    1. I had not heard of it either CoCo, I am still working on a recipe, but will be sure to let you know when I have one put together. I cannot seem to get it to the consistency I want.
