I like to think this easy taco recipe is a healthy tacos recipe choice. I have even included the taco seasoning recipe today, so get excited for your next Taco Tuesday night!

Just the other day, my husband said tacos sure do sound good. I thought okay, I will create a recipe, only if he knew what I had in mind, I doubt he would have mentioned it.
I have to ask, how many of you make dinner, and then when you serve it, the family as a collective or husband, or kids say, oh you made that?
Does it hurt your feelings?
I know it does me.
I think, well, I figured out this recipe and wrote down the ingredients, and taste tested it, and I think it is pretty good, only to hear Agh...
I admit, I get a bit peeved.
So, when my husband asked tacos? as he walked in the back door.
I said yes, he pumped his fist, and replied, YES!
Then I heard, do I smell fish?
Also yes... then he said I am not eating that.
Talk about a wife that wasn't exactly happy with that response, and that would be putting it lightly.
Since I did not mix the fish in with the rest of my fixing's, he was in luck, so my fish tacos became vegetable tacos for him, but you can make this any old way you want. I have sampled both, and I have to say, I think I am on to something here. YUM!
Tacos Recipe
Ingredients:
- 1 small bag frozen corn
- 1 large green pepper, chopped
- 1 onion, chopped
- 1 can black beans, washed and drained
- 1 can Rotel
- 1 t cumin
- 1 t smoked paprika
- 1 t garlic powder
- 1 t onion powder
- Salt & pepper to taste
- Old El Paso Crunchy Taco Shells
- Homemade Ranch Dressing
Instructions:
- Place all vegetables into skillet on medium heat
- Add spices
- Cook until vegetables are cooked through
- Remove from heat
- Set air fryer to 325 degrees, six minutes to warm the tacos
- Drizzle Homemade Ranch Dressing over top
I promise if you try warming your taco shells in the air fryer as instructed above, you will not be disappointed. It is the only way my husband will eat tacos now. He did not even complain that he was having vegetable tacos since the taco shell was all warm and crunchy.
I know... can you believe it?
And.... he asked for vegetable tacos the following night. He didn't need to know we were already having them again. teehee... cook once, eat twice is my philosophy, and if I can squeeze even more nights out of one night of cooking, I totally will! And I did too.
Fish Tacos
- I planned tilapia for my fish tacos recipe, and placed it on our air fryer. I sprinkled smoked paprika, garlic powder, cumin, and onion powder, along with salt and pepper onto the fish.
- I placed the fish onto a piece of foil (because I hate messes to clean up), and then set the air fryer to 390 degrees for 17 minutes. When the air fryer alerted me to flip my fish, I did so.
- I did remove the tilapia about a minute early.
This was the best batch of tilapia I have made, if I do say so myself. The fish was pretty tasty with the spices, I could eat it every night. I just wish I could get Mr. Fried Fish on board. Maybe some day...
