Super Soft and Chewy Date Pecan Cookies - Better Late Than Never!

Speaking of brains, I recently read about a connection between forgetfulness and consuming sugar. Okay, so probably not the best thing to share with you when I am telling you about a cookie recipe, but I had to throw it out there.
Now the plus, I also read recently that dates can help brain health, with better memory and learning abilities if you consume dates. So, maybe the sugar in this recipe will be canceled out by the dates... fingers crossed.
Several weeks ago, I went through our cupboards to take stock of what we had. I found a bag of dates on the brink of expiration and so I wanted to use them. I do not know about you, but cookies sounded like the best idea to me, yum!
I have had pecans in our freezer for a while and decided they would pair well with the dates, and so I went about making some super delicious cookies, if I do not say so myself.
Sometimes a gal has to take a break from all of the healthy and get her sugar fix on, and that is exactly what I did.
These cookies were so soft, and chewy, oh my goodness, just give them a try, you won't be disappointed. Even my husband liked them, and he isn't necessarily a fan of dates.
Chewy Date Pecan Cookies
Ingredients:
- 1 c butter, softened
- 1 c sugar
- 3 eggs
- 3 c flour, I used gluten free, but this will work with regular flour too
- 1 t baking soda
- 1/2 t ground cinnamon
- 1/4 t pumpkin spice
- 2 t water
- 8 oz package pitted dates
- 1 c chopped pecans
Instructions:
- Chop pecans and dates, I roughly chopped them with a knife instead of getting the food processor out
- Mix softened butter, sugar, and eggs into mixing bowl
- In separate bowl, mix flour, baking soda, ground cinnamon, pumpkin spice together until mixed well
- Slowly add in dry ingredients to wet ingredients while mixing with mixer
- Add water
- Remove from mixer, hand mix dates and pecans
- Scoop cookie dough batter onto cookie sheet into balls
- Bake at 350 degrees for 9-11 minutes depending on your oven
- Remove from oven, cool, and enjoy!
