Let me begin this post by recounting a humorous exchange with my husband who remarked, "You know that doesn't exactly look appetizing, right?" To which I cheekily responded, "Sometimes the most nourishing foods aren't always the most aesthetically pleasing, ha!"


It's been a while since I've shared a health-conscious recipe, and I wanted to give you a heads up that my recipe shares might look a bit different in the upcoming months. I'm currently on a new path, exploring ways to heal my body through the foods I consume, based on insights from a book I've been immersed in.


The author of this book proposes that our bodies have the incredible ability to heal our bodies from the inside out through food, bypassing the need for prescription drugs. He even suggests that we can combat cancer by nourishing our bodies with the right foods. It makes you wonder why more physicians aren't spreading this valuable information, doesn't it? The book delves into this question as well.

In the past, I was more focused on the practical aspects rather than delving into the learning process. However, I've come to realize that understanding and equipping ourselves with the right tools are crucial for success. What do I have to lose? My hope is that I can heal myself and perhaps eliminate the injections I'm currently receiving – in a perfect world, right?


Now, let me share a recipe that aligns with my current dietary journey:

Salmon Stir Fry

Ingredients:

  1. 1 can salmon
  2. 1 package Deluxe Stir Fry Vegetables
  3. 1 small onion, diced
  4. 1/4 cup honey
  5. 1/4 teaspoon cayenne pepper
  6. 1 tablespoon garlic powder
  7. Cooked quinoa (1 cup quinoa and 2 cups water)
  8. Salt and pepper to taste

Instructions:

  • Place one cup quinoa into a pan with two cups of water. Bring it to a boil, reduce heat, cover, and simmer until all the water has evaporated.
  • Coat a skillet with one tablespoon of olive oil. Add vegetables, including diced onion, and cook over medium heat.
  • Add salmon, mixing well with the vegetables.
  • Introduce spices and honey.
  • Add the cooked quinoa to the skillet, ensuring a thorough mix.
  • Serve and enjoy!

Tips:

  • Cleaning the quinoa is crucial. Place it in a small strainer and run water over it until it runs clear.
  • Consider picking out the small, round bones in the salmon for a smoother dining experience. I learned this the amusing way – initially wondering why something was crunchy, only to realize my oversight. Some prefer leaving the bones in when making salmon cakes (my husband being one of those people), I am not so sure I am a fan.

I've previously mentioned my mom's skepticism about my gluten-free creations, but when I invited her over for dinner, she expressed genuine enjoyment of this dish. It marked her first experience with quinoa, and she was pleasantly surprised. A win for me! I've deemed this dish worthy of sharing with you.

Last year I started eating more plant based meals and while it hasn't cured every symptom it has helped a lot. Plus, it's nice to feel more empowered when making healthcare decisions because I felt like I had done the research so I was asking better questions, you know?     1. That is awesome you have gone plant based, I have heard a lot of positive experiences when folks do this like coming out of heart disease, and asthma (something I am hoping can happen for me). I sometimes feel like we ask the questions, but do not really get any answers, so I decided to take matters into my own hands. I did recently ask if I could perhaps cure the autoimmune disorders, and was told no. I would kind of like to maybe prove them wrong... but not sure if it will happen with this new approach. I am gluten free because of allergies, and have found plant based is kind of difficult since so many foods have wheat in them. This doctor says the only meat we should have is chicken (dark meat)... I skipped ahead to see a list of foods so now I have to go back and learn why this is. He recommends a lot of seafood, but I also know we have to mindful of the mercury. Thank you for cheering me on CoCo, I appreciate it and think I will need it. I am experimenting and seeing what works and then writing down my recipes to share so others can benefit from what I learn too.

  2. Hi Cara! Most doctors have been taught that medicine is the only thing that can heal our bodies and don't ever talk about changing the way we eat. I know what changing my diet has done for my health issues, so I applaud you for reading on your own and trying new things. Every persons body is different and what works for one might not work for others, so it's important to see how your body reacts to food! It's hard to make changes and I'm cheering you on as you go on this journey!

    1. You are so right Donna, I am finding the medications are not reacting well to my body, and have recently learned this may be an ongoing thing for me. I would love nothing more than to leave the inhalers and injections behind, and if I can, I will! I have been gluten free for quite a long time, but now... I am wondering what exactly we should eat? I am working with what I am reading, and absorbing all I can. Sure can be overwhelming, but I got this. ;)
