The other day, I got a call from the North Pole – it was Mrs. Claus! She asked if I could whip up a healthier cookie for Santa. Assuring her, I gladly accepted the challenge.
Even Santa needs a little help sometimes, right?
So, today's experiment: a health-friendly cookie made from items on the brink of expiration in my cupboards. That's my cooking style – been doing it for years, so why stop now? Not to mention we try to reduce waste as much as we can.
Blueberry Banana Apple Oatmeal Cookies (try saying that three times fast!)
Ingredients:
- 3 washed apples with skin
- 3 peeled bananas
- 1 c fresh blueberries, washed and drained
- 1 c roasted unsalted almonds
- 1 c gluten free oats
- 5 T gluten free all purpose baking flour
- 1 t salt
- 1 t baking powder
Instructions:
- Cut apples into quarters, place in the Vitamix along with bananas (or a food processor if you don't have one). Ensure apples and skins are pulverized.
- Add almonds, oats, salt, baking powder, and flour to mixture, and let the Vitamix do it's magic
- Transfer batter to a bowl, fold in blueberries
- Spoon cookie dough onto baking sheet, bake for 9 minutes at 350 degrees
- Remove from oven, let them cool and voila! Yummy, delicious, no sugar added cookies!
Cooking and baking with the simplest ingredients adds a magical touch to our meals. Now, if you're on the hunt for a sugar-loaded cookie, well, this might not be it. Yet, with the sweetness of bananas, apples, and blueberries, it's a different kind of delightful. Not your typical store-bought cookie - in my humble opinion, they're even better!
Let me take a moment to tip my hat off to my Vitamix, my trusty helper in the kitchen. It's the maestro, especially when dealing with dates or conjuring up almond, rice, and oat flours.
Baking often finds me teetering between health-conscious creations and the occasional sweet indulgence. Some crave more sugar in my recipes, while others champion the healthy route. Sugar enthusiasts, fear not, you can customize it to your liking, spoon by spoon. While I occasionally share the sugary confections we all love, my daily recipes cater to what works for us.
In the grand scheme of things, I'm just striving to do what's best for us. Pleasing everyone is a Herculean task, and I've tried. So, here's a festive reminder: do your best, and if others miss the effort, take a breather. No need to stress over doing it all. I used to think I had to be everything for everyone, but life's events often humble us, revealing we are enough.

ReplyDeleteYou will have to let me know if you like them CoCo. My tastes are sometimes different than others, since I have been away from sugar and the like for so long. When I have something with a lot of sugar in it, it really hits me. I was worried they would not form, but they turned out so fluffy, and airy, I was pretty excited.
