Searching for easy baked chicken breast? We have a very simple and easy baked chicken breast recipe to share with you today.
Have I mentioned I am not a fan of chicken breasts? I really am not. In my opinion, they are too big, too thick, and take forever to bake. Yuck! There is a certain someone around here who happens to love them, so I pick them up occasionally.
It's been a while since we had a recipe share, so I thought, hey, why not chicken? You know it is our favorite. Fish is right up there for me, but Mr. VS? Not so much. He will eat it, but it is just not his favorite.
This is a simple one... how simple Cara?
Well, we all know I will not make up a recipe unless it is super simple... so I am going with super duper simple!
- First you remove the chicken breasts from the packaging and place them into the bottom of your pan. This baking dish was a wedding gift to us and I use this one all of the time!
- Salt and pepper the chicken
- Open 1 can of Progresso Broccoli and Cheese soup, did you know a lot of their soups are gluten free?
- Pour the soup over the top of your chicken
- Cut up one onion and sprinkle over chicken and soup mixture
- Add 1/2 c gluten free bread crumbs. For those of you who are not GF, you could crush up crackers and sprinkle over the top too.
That is your prep, I told you this was a simple one. Then came the baking part. I had already preheated the oven to 375 degrees. I set the timer for 60 minutes. When I checked the chicken, I had to put it back in for another 15 minutes since the breast meat was just too thick.
You may need to do this too, or if you have smaller chicken breasts, you may be ok with the one hour time frame.
Well, did this one fulfill the easy list? You could cut up small pieces of broccoli and add to this dish. You could also sprinkle cheese over it. Do you know that night I just had the chicken and no sides? Some evenings I am just a plain Jane.
Of course, Mr. VS loved this dish, it was chicken, what was there not to like for him? I was just happy I did not have to prep much, and it was really dinner on the fly. I love those dinners.
