Veggie recipes for everyone

Searching for summer dishes to cook?  Here we have a few recipes to share with you today that are also gluten free. 

Are you someone who loves vegetables like myself?  I mean I LOVE them, love them!  Fruit... not so much, but take my veggies away and I am not a happy camper... 

I have been experimenting again in the kitchen since you know I enjoy sharing recipes with you, but you know what?  I get bored with the same old, same old too... I like to spice things up a bit for myself and hubby.  Do you know peanut also likes veggies?  He absolutely loves sweet potatoes and will beg when I am cutting one up...  I give him a slice and he goes running off with it, he will rub himself on it... yep, disguising his scent with sweet potatoes... we love this kid so very much... 

What?  Oh yeah, we were talking about veggies weren't we... and how much I love them... back on track Cara... I went a little crazy on our last grocery order... I ordered so many fresh vegetables... squash, portabella mushrooms, white mushrooms, zucchini, corn on the cob, onions, red onions, small red potatoes... the list goes on.  I can honestly make a meal out of just veggies, Mr. Vintage?  He likes a little more substance to his meals... so I have been giving us the best of both worlds this week... 

Last night I chopped up: 

  1. 1 Red onion
  2. Entire carton of mushrooms slices
  3. 5 Small red potatoes (the cherry tomato size)
  4. 2 Corn cut off the cob
  5. About 8 springs of cilantro finely chopped 
I put the two ears of corn in the microwave with a wet paper towel around them and set it to 8 minutes.  My momma taught me that trick!  No boiling water... waiting for a half an hour for corn on the cob to be ready!  I then added the red onion, and potatoes to the skillet with a little bit of olive oil in it.  I let this cook down a bit, then added the mushrooms (they take so much less time to cook than the rest).  I removed the corn from the microwave and cut the corn from the cob and mixed all of the veggies together.  Then I added cilantro to the mix... we love this stuff!  Salt and pepper to taste.  If you would like, you can add Lawry's seasoning salt instead of regular salt to this dish if you prefer, I've had it both ways and it is just whatever you prefer.  


To appease Mr. Vintage, I cooked prime rib beef steak patties in the skillet.  I only added salt and pepper to taste for them.  

Dinner was super E-A-S-Y!  In my opinion, the best kind of recipes!  I have enjoyed learning to cook with spices, and herbs.  We love cilantro around here... it adds that extra kick I like so much... I thought about adding some cayenne to this dish, but then thought Mr. Vintage may not like it as much.  


I have another dish for you that takes basically no time to prep... do you like cauliflower?  It has become one of my favorite dishes here lately.  I have been making cauliflower steaks like it is going out of style!


All you have to do is cut one entire cauliflower in slices, kind of like a piece of steak.  Put it on a baking sheet, drizzle olive oil, sprinkle Lawry's seasoning salt, pepper, and cayenne on top and bake for 30-40 minutes (depending on your oven) in the oven at 350 degrees!  Remove from the oven and find this deliciousness ready for you.  I love this meal, once you start eating it, it is hard to stop!  


I especially love it when it gets a little brown around the edges... when I was growing up, we removed the flowers and never ate the stems, with this recipe, you eat the flowers and stems... and I will have to say, it has become one of my most favorite dishes!  

The house may not smell the most pleasant once it has been baked, but who cares, the taste is exquisite!  Y-U-M-M-Y!  

I hope this gives you some more recipes to add to your veggie side dish arsenal... I am a cayenne lover so I add it to a lot of my dishes.  I would like to learn more about cooking with turmeric if anyone has a dish to share with us, please do so.  I have been reading about the benefits of consuming turmeric lately and about how it helps with inflammation in the body... I will try it if it will help with that!

Doughmakers cookie sheet, we have them too!  I love them, we have two, they were actually a gift to me from someone I miss dearly.  They are the best cookie sheets though hands down... I have had mine for close to 20 years and they still look very good for their age.  I use them for cauliflower steaks too!  

Our hand mixer is great when you do not want to get the BIG mixer out, only ours is red.  I am really digging and in love with this blue though.
  
The ceramic knives... I have had mine for a few years, they are the best, and are very sharp... also they never rust which I love because a lot of my old knives would rust after a wash or two, and guess what, they can go in the dishwasher too!
