Gluten Free Salmon Cakes

Searching for gluten free recipes?  We would like to share how to make gluten free salmon cakes or patties, whatever you prefer to call them.  

Hi!  I am Cara, I write about our cozy cottage that we have been working on for what seems like forever, but we want to get it perfect the first time around.  I have followed blogs for years, and decided why not try my hand at this thing called blogging too?  We share projects we work on around the house, recipes, and many stories about a German Shepherd Beagle who we call peanut... he is a handful, but a smart cookie.  We hope you will enjoy the time you spend here today and look forward to seeing you back soon!     


I decided to try something new to share with you today.  I love baked salmon, but Mr. Vintage?  Not so much... he told me he liked salmon cakes... I said I can work with that... so I came up with this recipe which he loved and I said ok, if you like it, then I know others will think it is tasty too. 

Gluten Free Salmon Cakes

1 15 oz can salmon
1 large egg
1/2 c cashew flour
1 T Dijon mustard
1/4 c mayonnaise
1 t garlic powder
1 t lemon juice
2 T minced onions
1/2 t dried parsley
A dash of cayenne pepper (optional)

Mix together canned salmon, egg, cashew flour, Dijon mustard and mayo.  Stir until mixed together well, then add in garlic powder, lemon juice, onions, and parsley.  If you choose to add the cayenne, I added it last since it sounded like a good idea at the last minute, and I love a little spice.

Once all of the ingredients are mixed thoroughly, spoon the batter in a skillet coated with olive oil.  I fried three cakes at a time, the batter will make 8 patties.

I salted and peppered the patties when they were being plated.  I made a salad and dinner was served... super easy dinner to put together when you do not have a lot of time and need dinner quick!  

Can you believe Mom even ate them and said they were good?  She does not like many gluten free foods... I think it is because she has it in her mind that she will not like it... especially since once she tries something she tells me how good it is.  😉  Trying new things is hard... especially if you do not have to...

Do you know someone in your life with food allergies?  Share our recipes with them, I am not afraid to be the guinea pig and share with you recipes we come up with.  It is a lot of fun to experiment in the kitchen when you have time.  

When I started searching out gluten free recipes, I had no idea where to begin.  I was lost, of course, there are definitely more options at the grocery and restaurants now than there were years ago.  It is becoming more prevalent and more people are finding they have food allergies or food sensitivities.  Some of those gluten free recipes out there are pretty complex, and that is not me.  I like simple, I think most people appreciate simplicity in a recipe.  Uncomplicated ingredients are what I like to work with so they are items that are easy to find at the grocery, and yet at the same time easy to use...  let us know what you think about this recipe share... we will be making these again soon!

Mr. Vintage wanted you to know the salmon patties are great on a salad too!  You can also use tarter sauce if you prefer, I just salt and peppered mine and ate them as is.  This will become one of those recipes we will be making often.  We had leftovers and they were still good warmed up too.  I placed mine on foil in the Nuwave oven the following day and set the timer for 3 minutes.  We told you all about our Nuwave oven which you can read here if you missed it.  

We purchased our Calphalon pans a few years ago.  I decided to get away from the coated skillets since when the pan becomes scratched they say you should not use them anymore since the chemicals in the coating will leech into your food.  That got pretty expensive replacing pots and pans so often.  We decided to splurge on a new set and we will never go back to the nonstick surfaces again, we love the stainless steel.  They take a little getting used to, but once I did, wow!  I love them!
