Searching for dinner recipes that have quick prep times? I have a Mexican Chicken Bake for you that takes 10 minutes tops.
We love chicken around here... I shared with you that we eat it about 3-4 times a week, sometimes more... We do not consume a lot of red meat. Not that I do not like red meat because I do love a good steak, but Mr. Vintage is not so fond of it.
To keep things interesting, I come up with new recipes all of the time, who wants to be bored at dinner time every night? I also like something that is easy to throw together. After you work all day, sometimes dinner is the last thing you want to think about, and prep? I do not like a meal that takes a long time to prepare.
Sometimes making dinner is the easiest part of my day, so I want it to be short, sweet, and effortless. Do you ever notice our evenings are never as long as we would like them to be? I get more "me/our time" if it doesn't take as long to prepare dinner, and who doesn't want that?
Eating at home has been a thing for us even before Covid, it's kind-of difficult for me to find something on a take out menu that coincides with my food allergies. I have gotten pretty inventive over the years in still being able to find things we both like and taste pretty darn good too. It's a balancing act... but one I am getting better at, I think I am anyway.
If you have a GFS near you, I highly recommend checking out their fresh chicken. One, they are huge and I can get about three portions out of each breast, sometimes four. Two, the chicken is the most moist I have been able to find, no gristle either. I hate that! Yuck! (I did put in account for this recipe that most of you were not purchasing meat from there so the 2 breasts will be just fine for this recipe, it will yield 4 servings).
In the above photo, the chicken is completely covered with seasonings, cauliflower, black beans, and Rotel, ready to go in the oven for an hour. Prep time is at most 10 minutes! Cutting the chicken breast is what takes the most time.
I love my antique dishes one of my friends gave me. She was at an auction and told her now husband, Cara would love those, and guess what? She was right! The paisley pattern? Oh my goodness... these were right up my alley!
My sister just happened to also purchase the same set as a wedding present for us too. So guess what that means? We have enough to host a small gathering with these plates... I do enjoy getting out these dishes every now and then for variety. Like everything else vintage, I like to collect plates. I find I am infatuated with surrounding us with beauty even in the small things in life. In my opinion, it just lifts my spirits after a rough day and puts a smile on my face.
We decided to try something new today and thought we would share a recipe card in case you wanted to save this recipe. It is below.
If you try this one, let us know how you like it. Mr. Vintage said, wow, this is spicy! I like a little spice... if spicy is not your thing. You can eliminate the cayenne pepper from this recipe. We also make enough so we have leftovers.
We take the leftovers, reheat in the oven and serve over nachos, or you can even make enchiladas. If you decide on enchiladas, you can purchase gluten free wraps at any grocery and place leftovers inside. Mr. Vintage likes to add cheese to both recipes, place the wraps in the oven and bake for 20-25 minutes until the wrap is beginning to turn a golden brown.
