Easy Baked Chicken Recipe
I have another super easy chicken recipe for you! If you have followed for any length of time, you know I like easy, but I also have to be gluten free due to a wheat, barley, and rye allergy. This recipe is for anyone though, my husband loves it when I make this dinner... I would never share with him how easy it really is, he can think I slave over it all night after a long day at work!
We have been taking advantage of the curbside pick-up with Gordon Food Services (GFS). I purchase their fresh chicken breasts; they are so large we spilt them in half for the both of us and sometimes I can even cut one into thirds. I am a big fan of Pico de Gallo and purchase it already premade. If you have time to make your own then I am coming on over for dinner, we can make this recipe together! There is nothing quite like homemade Pico de Gallo, my mom makes it in the summer and I am always waiting for some to come my way. 😊
Ok, ready for how involved this recipe is? It is pretty hard and you will definitely need all day to prep... and once your family tastes the deliciousness of this dish, they will be begging you to make it again. Then you may be able to bargain with them to do the clean up after you slaved away... you know, all day...
Easy Baked Chicken
2 chicken breasts
1 container of Pico de Gallo
Optional: you can add cheese to the top of your chicken if you prefer, Mr. Vintage loves this. If you have not tried Shreds cheese, it is pretty good melted over the top if you are dairy free. I have added this to my lifestyle too.
Preheat oven to 350 degrees. Cover your pan with foil for simple clean up (I hate scrubbing baked on anything out of a pan). Place both breasts in the pan and pour Pico de Gallo over the top (I use the whole container). Bake for 1 hour depending on your chicken breast size.
Spinach
I did not do any real measuring for this. Pour 1 T of olive oil to coat pan. Fill a skillet with fresh spinach (I filled mine to the brim) then sprinkle 1 t of garlic powder over the spinach with salt and pepper to taste. Cover and cook until spinach has wilted. Takes just a few minutes for this side dish.
Sweet Potato Fries
1 large sweet potato sliced into strips, place on lined baking pan (why clean up if we do not have to) and sprinkle with Lawry's seasoning salt and pepper to taste. Bake for 1 hour.
I put the chicken and sweet potato fries in the oven side by side so I do not have to watch two different dishes, set the timer for an hour, and forget about it until the timer goes off.
