We have a dinner for you that is gluten free, but others will love it too! In this household, we eat a lot of chicken and fish!
We have it at least 5 nights a week... extreme? I hope not! We just love it that much, so sometimes I need to get a little creative to keep from having the same thing all of the time.
Who wants to be bored with dinner every night? Not us, that is for sure! My husband is kind of picky... and he gives this recipe 2 thumbs up and actually requests it when I have not made it in a while.
As you know, I enjoy making up recipes. I created this one a while back. My usual MO is a little bit of this and a little bit of that. I am not one to do much measuring.
If you have followed along for any length of time, you know I do this in a lot of aspects of life. Shh... it's not something I am proud of. I just seem to do better on the fly... when I plan, something always comes up, or does not turn out! So I save time winging it in my projects and recipes.
Now on to the recipe!
Sweet and Spicy Chicken Thighs
- 4-5 chicken thighs (boneless, skinless)
- 2 sweet onions
- 1 green pepper
- salt and pepper to taste
- 1/4 t oregano
- 1/2 t garlic powder
- 1/4 paprika
- 1/4 t cayenne pepper (or more if you like)
- 1 t honey (or more if you like a sweet taste)
- olive oil in bottom of skillet
Coat bottom of pan with olive oil, dice green pepper, onion, place in skillet with chicken thighs.
Sprinkle all seasonings over chicken and vegetables, cover and cook until chicken is no longer pink.
Serve over rice or alone.
It is really that easy, I like the easy dishes after working all day, I want to hurry up and get to my crafting or painting at night, ha!
A variation of this recipe is adding a sweet potato thinly sliced, I also sometimes go crazy with the cayenne, but I tried to keep in perspective not everyone loves the spice like I do.
If you want it a little sweeter, add more honey. This recipe can really be what you prefer. I add, taste, then add, then try it until I get what I like. This particular time, I was out of sweet potatoes or they would have been going in this dish tonight. I love them!
I cook a lot with onion, but I hate standing at the counter chopping away every night so I invested in this handy dandy veggie chopper (similar one found). Can I tell you how much easier it has made life and what a time saver it is?
After I have all of the veggies chopped, I just throw them in over the seasoned chicken thighs.
